We have all shared a meal with friends and family. Food and beverages are certainly things that brings us all together. In this class Barry shows us how to prepare our own brunch at home to share with family, friends, or even over a Zoom call!

Brunch

Barry led this class through each step in preparing a wonderful brunch spread. Everything from avocado toast to eggs benedict and some wonderful beverages to accompanying the meal.

Starting with your bread of choice, Barry leads us through how to perfectly toast the slices of bread for a beautifully crispy outside while retaining the soft fluffy inside. The bread can be used for any brunch dish you prefer. In this instance Barry uses his slices of bread for avocado toast and eggs benedict.

Begin by preparing the bread slices with butter on each side. Place them in a heated skillet on the stove top. Allow to toast on each side until there is a golden brown layer.

Avocado Toast

For avocado toast you’ll want to prepare your avocados by placing them in a bowl and mashing them together until they are combined and the mixture is creamy. You can feel free to add your choice of seasonings to your avocado mixture such as garlic, lime or lemon, salt, pepper…etc. whatever your preference.

When assembling your avocado toast, simply place your avocado spread on your slice of toast. You can feel free to add toppings and garnishes of your choosing. In this tutorial Barry halved cherry tomatoes and placed them top. You can add fresh parsley, more seasoning, grated cheese…etc. whatever you prefer and have available to you will work great!

Eggs Benedict

For eggs benedict Barry used the same toasted bread, eggs, ham, and leafy greens. For this recipe you’ll want to poach your eggs. To do this you want to get a small pot of water to simmer. Add a drop of vinegar. Get a fresh egg and crack it into a small bowl. When you are ready you’ll take a spoon and stir the water to create a small whirlpool and gently drop the egg into the middle of the spinning water. Let it cook for 3-4minutes in the water to get a perfectly poached egg. When you are ready to take it out of the water, get a spoon or ladle and gently scoop it out. All it’ll need after that is some seasoning.

For eggs benedict you’ll want to also prepare some sliced ham/Canadian bacon or meat of your choice. You can pick your preferred method of preparing your meat, on the stove top or in the oven. Once you have your eggs poached and your ham ready, it is time to assemble!

First take your toast and add your ham. Next add some leafy greens such as arugula, spinach, romaine…etc. Next take your poached egg and place that on top. Voila, you have just made eggs benedict.

As an added bonus you can make some Hollandaise Sauce to pour over your meal by combing egg yolks, lemon juice, dijon, a pinch of cayenne pepper, and salt into a blender. Once combined pour hot melted butter in while the blender is on low. Once everything, including the hot melted butter, is combined, you are ready to pour it over your meal and serve!

Cocktail

To top off all of this amazing food you’ll need something to wash it down. Barry shows how to make a Bloody Mary from scratch. You need 4oz tomato sauce, a lime and lemon wedge, 2oz of vodka, 2 dashes of tabasco sauce, 2 tsp Horseradish, 2 dashes of Worcestershire sauce 1 pinch Celery salt, 1 pinch Ground black pepper, 1 pinch smoked paprika. Combine all of these ingredients, mix well, then pour into your glass of choice. For garnish you can use: lime wedge, green olive, parsley sprig and a celery stalk.
